Macallan Cask Strength, 58.6% abv

Heady sherry, rich raisins, cocoa and dark fruit on the nose. Rich luscious sherry mouthfeel. Plums, figs, dark fruit, absolutely delicious, Xmas pudding and a hint of anise on the palate. Exceptionally well balanced, with amazing sherried richness on a long lingering finish. WOW!

Bushmills 21 years old Rare Aged, 40% abv

Light rich tropical fruit, juicy fruit gummies, amazing richness, honey, vanilla, caramel and a touch of soft smoke on the nose. Delightful richness and fruit mouthfeel. Complex, papaya, mangos, fruit, flowers, sherry, toffee with an absolutely luscious sensation on the palate. Soft sweet rich medium finish.

Lovely fruity peat, oranges, rich, cinnamon, cloves, crème brûlée and honey on the nose. Amazing sweet rich peat. Pears and peat are amazing, round, luscious, very rich, cinnamon, nutmeg and brown sugar on the palate. Rich pears, peat and icing sugar on a medium long finish. WOW!

Imperial 1993, 43% abv

Soft sherry, brown sugar, caramel cocoa and a hint of dry grass on the nose. Superb rich soft sherry mouthfeel. Dry, rich sherry, amazing sweetness, lovely white fruit notes on the palate. Very well balanced. Pears and soft sherry mingle on a medium finish.

Glenfiddich Havana Reserve, 21 Years Old, 40% abv

Rich, honey, vanilla fruitcake with a wee rum aroma on the nose. Lovely spices and fruity mouthfeel. Touch of ginger, rum, figs, cocoa, luscious dark fruit, fudge with delightful spices on the palate. Rum soaked fruitcake sensation lingers on a medium long finish.

Orchard fruit, peaches, oranges, dried tropical fruit then luscious pears on the nose. Soft luscious mouthfeel. Pineapples, tropical fruit jam, more tropical fruit lusciousness on the palate. Rich tropical fruit on rich soft long finish.

SMWS 53.477 Faux Foie Gras 2010 13 Years Old, 57.4% abv

Smoke, buttered popcorn, peat with sherry in background, light caramel, red fruit on the nose. Rich soft smooth BBQ smoke mouthfeel. Honey glazed BBQ"d ribs, smoked paté, some sherry, then more smoke with a beautiful meaty sensation on the palate. Amazing honey, smoke, BBQ notes and sherry on a long finish. WOW!

Flowers, caramel, honey with light lemon lime peat aromas on the nose. Intense rich floral peat mouthfeel. Citrus, lemon lime, floral peat, smoke, sweet, oily on the palate. Simply delightful. Solid, rich sweet peat on a medium long finish.

Rich, soft sherry, raisins and vanilla on the nose. Lovely richness, sweet mouthfeel. Amazing richness continues with soft sherry notes, flowers and red fruit on the palate. Richness continues throughout with superb fruit anf floral notes on a soft long finish.

Ardmore 1997 25 Years Old, Cask 5564, Gordon & MacPhail, 50.3% abv

Lovely soft dark fruit, hint of smoke, PX style sherry and a whiff of barnyard (not unpleasant) on the nose. Delightful smoke and peat mouthfeel. Rich, soft dry peat, dark fruit with a gentle sherry undertone on the palate. Complex. Superb medium long finish with sherry, dark fruit and sherry.
